Historical Origins of Northern Chinese Dumplings

Dumplings originated from jiaozi in ancient China, also known as "bianshi" or "zhujiao", with a history of over 1,800 years. According to research, dumplings first appeared during the Eastern Han Dynasty, invented by Zhang Zhongjing, a medical sage from Nanyang, initially as a medicine to treat frostbite on ears.

Zhang Zhongjing wrapped mutton, chili peppers, and some cold-dispelling herbs in dough shaped like ears, boiled them and gave them to the poor with soup to help them withstand the cold. This food was later called "jiao'er" (delicate ears), which gradually evolved into today's dumplings.
